Copenhagen was on my must-visit list for the longest time, and I was so happy we finally made the trip! We had about three days before our London trip in August to explore—the city was quaint, calm, and design-centered, and we loved every minute of it. There wasn’t a huge amount of time to spend, so we focused our schedule around restaurants and homewares (eye) shopping. The food was all spectacular, and I especially enjoyed the few things we had at Torvehallerne Food Market. Nordic design encapsulated the entire city, which was completely inspiring. I also loved all the Copenhagen-based brands and designers I saw; it really made me want to return for Copenhagen Fashion Week. Hopefully I get to return soon, the whole city is just so calming and beautiful :)

We spent two days at the FS Oahu before heading back home to New York after spending a week at FS Hualalai. It’s always nice getting a little taste of Hawaiian city life, too! We usually stay on the east side of the island either in or near Waikiki, but this time we stayed on the west side as the resort is located in Ko Olina. It was really nice to be so close to the coastline and all its beautiful views. We rented a car one of the days and drove up the north shore as well as to the east side to shop at the Waikele Outlet as well as Luxury Row (need a good balance!). Our 6-year wedding anniversary was also this weekend, so the resort was really accommodating and thoughtful in making our day super special. From the chocolate and champagne treats to the couple’s massage, and amazing dinner experience at Noe, we could not have celebrated in a more memorable way.

Before Chef Fest at Four Seasons Resort Hualalai, we had two days to explore the Big Island. We rented a car and drove up the coastline to the northern end as well as to the east side just short of reaching Hilo. There were extreme differences to the various parts of the island; the west side being made up of volcanic ash and the east being tropical and lush with waterfalls. As we explored, we were truly taken by the landscape—it seemed unreal and like Mars in certain areas! We took a helicopter ride one morning, which also gave us a nice overview of the island. Since it was about a month after the volcanoes last erupted, there was still smoke coming up from the ground and we could see the molten lava flow remains where it impacted nearby towns. It was so crazy to see this IRL, and also sad as people have lost their homes. The ride itself was two hours, closed doors, flying out of Kona Airport that was 15 minutes from our hotel. I almost wished we did the 1.5–2 hour drive over to the east side to take the open-doors ride. We rode experienced this in Kauai a few years ago, and it was seriously life-changing. We also had to get local poke while we still had the car, but since it was Sunday and Monday, most places were closed. One of the few places that was open was Da Poke Shack, which was really, really good! A bit pricey, but super fresh and flavorful. Until we meet again, Hawai’i!
